Capitalism and buffalo meat...

It seems to be the fate of these large, noble animals to rot whenever capitalists get interested in them. They should be left alone, period!

BRIDGEWATER, S.D. — A South Dakota town that had to remove 44 tons of rotting bison meat left in a warehouse wants to know if the owner plans to pay for the cleanup.

Ilan Parente (EE'-lahn pah-RENT'-ay) closed Bridgewater Quality Meats in January 2008 and moved the business to Minnesota.

The meat stayed cold until December, when the power was cut. By June, the smell had extended to the whole town, so workers removed the mess.

The stench is gone but Parente owes more than $11,000 for cleanup costs and more than $14,000 in property taxes on the business and a house.

According to a lawsuit, he could face civil penalties of up to $7 million if convicted of dumping too much blood and animal parts down the drain.

Parente could not be reached and his lawyer declined to comment.

I don't quite understand why this happened. We are planning to stay at a resort in December where Buffalo meat is served. My wife wants to try it. They charge plenty for a steak.

I get really good Buffalo/Bison Jerky at Dean and Deluca...

You can get it at a number of stores in Albuquerque, including Keller's Farm Stores. http://kellersfarmstores.com/index.shtml I don't think they do mail order, though. Buffalo steaks, though, are not a good idea. It is a very lean meat. You think round steak is lean? Try buffalo. Otherwise, it tastes just like beef. It is best served as medallions.

It is a very lean meat. You think round steak is lean? Try buffalo.
Moose meat is also very lean but it tastes like moose, not beef. I always cook it in the oven, wrapped in an aluminum paper bag, with veggies and a bit of broth (or red wine), at 250F, for about two to three hours.

I have eaten alot of Buffalo Ribeye steak - its very good
